Two pairings to make a meal.
Serves 6
1 Tbsp olive oil
2 cloves garlic, minced
1 onion, chopped
1 green pepper, seeded and chopped
1/2 tsp hot pepper sauce
1/2 tsp chili powder (or ancho chili powder)
1/2 tsp cumin
1/2 tsp dried oregano leaves
1 - 15 oz can tomato sauce
1 - 15 oz can red kidney beans, rinsed and drained
1 1/2 cups of water
1 cup uncooked long grain rice
2 tomatoes, seeded and chopped
In a large skillet on medium heat combine oil, garlic and onion and pepper, cook until softened, about 5 minutes. Add the rice, tomato sauce, water, pepper sauce and spices, mix well. Bring to a boil, cover and reduce heat to simmer until rice is cooked, about 20 minutes. Stir in beans and chopped tomatoes and heat through.
Serve warm.
